    For 99% of human history, people took their food from the world around them. They ate all that they
could find, and then moved on. Then around 10,000 years ago, about 1% of human history, people learned
to farm the land. 
    The kind of food we eat depends on which part of the world we live in, or which part of our country
we live in. For example, in the south of China they eat rice, but in the north they eat noodles. In European
countries near the sea, people eat a lot of fish. In central Europe, away from the sea, people don't eat so
much fish, but they eat more meat. For example, in Germany and Poland, there are hundreds of different
kinds of sausages.
    In North America, Australia, and Europe, people eat with knives and forks. In China, people eat with
chopsticks. In parts of India and the Middle East, people use their fingers to pick up food.
    Nowadays it is possible to transport food easily from one part of the world to another. We can eat
whatever we like, at any time of the year. In Britain, bananas come from Africa; rice comes from India or
the U.S.A.; strawberries come from Chile or Spain. Food is a very big business. But people in poor countries
are still hungry while people in rich countries eat too much.

     On June 30, 2009, a Yemenia airplane from Paris to Comoros, Africa, crashed into the Indian Ocean.
There were 153 people on the plane, including some French officials. Though people have been searching

a miracle for her to escape in this way. In her daddy's warm arms, the girl could soon remember what she
had experienced."I was thrown out of the plane and then I saw the plane fall into the water. Next I found
myself in the water. I couldn't swim very well and I caught something but I didn't know what is was," said
the girl.
     "She is really a lucky young girl," said Alain Joyandet, France's minister for International Cooperation.

       Many places in the world need more fresh water. Every country is trying to find ways to turn salt water
into fresh. Why aren't there many factories like the Symi factory?
        In some places, the sun is not hot enough. Or it does not shine every day. In such places, other ways of
heating sea water can be used. These ways cost more money, but they work faster than the sun. By boiling sea
water with high heat, a lot of fresh water can be made quickly.
        But heating is not the only way to get fresh water from salt water. Other ways are tried. One way is
freezing. The fresh part of salt water freezes (冷至結(jié)冰) first. To get fresh water, the bits of ice are taken out. 
        Which way is the best? The one that gives the most water for the least money. It may be a different way
for each place.
