Europe’s deadly outbreak of a rare form of E. coli bacteria (大腸桿菌) has brought new attention to food safety issues. One of the problems when people get sick from food is that the simplest question is often difficult or even impossible to answer. Just what did the people eat that made them sick?
Of course, one way to avoid these medical mysteries is to keep dangerous organisms out of the food supply. This is easier said than done, but scientists keep looking for new ways.
Scientists in the United States have developed an experimental system that uses a high-tech optical scanner. The system is designed to identify the presence of contaminants(致污物) like soil or animal waste on fresh produce. These can be sources of E. coli. E. coli bacteria naturally live in the intestines(腸) of humans and many animals. Most kinds of E. coli are harmless but some can make people sick.
The new scanner can also show damage and imperfections that might make the produce unappealing to shoppers.
Scientists designed the system at a Department of Agriculture research center in Beltsville, Maryland. Moon Kim of the Agricultural Research Service led the team.
MOON KIM: “We were requested, we were asked, to develop a method to detect contamination in produce. So we started with the apple as the model sample.”
The scanner uses a high-speed camera placed over the conveyer belt that moves the produce along. As the apples move along the belt, the scanner captures images of each piece of fruit.
Moon Kim says the team hopes the system will be available before long.
MOON KIM: “We are targeting for development in commercial plants for the next several years.”
The scanner can direct a sorting machine to separate the bad apples from the good ones. The system is currently able to show the surface of only half the apple as it speeds by. The inventers hope to improve the process so it can show the whole surface.

Bad teeth can be painful and even be deadly. Infections of the gums(牙齦) and teeth can release bacteria into the blood system. Those bacteria can increase the chance of a heart attack or stroke and worsen the effects of other diseases. And adults are not the only ones at risk. For example, a 12yearold boy died when a tooth infection spread to his brain in 2007 in Washington. Experts said it might have been prevented had he received the dental care he needed.
Experts say good dental care starts at birth. Breast milk, they say, is the best food for the healthy development of teeth. Breast milk can help slow bacterial growth and acid production in the mouth. But dentists say a baby's gums and early teeth should be cleaned after each feeding by using a cloth with a little warm water. Experts say if you decide to put your baby to sleep with a bottle, give only water.
When baby teeth begin to appear, you can clean them with a wet toothbrush. Dentists say it is important to find soft toothbrushes made especially for babies and to use them very gently. The use of fluoride(氟化物) to protect teeth is common in many parts of the world. For example, it is often added to drinking water supplies. The fluoride mixes with enamel(釉質(zhì)), the hard surface on teeth, to help prevent holes from forming.
But young children often swallow toothpaste when they brush their teeth. The American Academy of Pediatric Dentistry notes that swallowing fluoridated toothpaste can cause problems. So young children should be carefully watched when they brush their teeth. And only a small amount of fluoridated toothpaste, the size of a pea, should be used.
Parents often wonder what effect finger sucking might have on their baby's teeth. Dental experts generally agree that this is fine early in life. Most children stop sucking their fingers by the age of four. If it continues, experts advise parents to talk to their children's dentists or doctors. Because it could interfere_with the correct development of permanent teeth.
Dentists say children should have their first dental visit at least by the time they are one year old. They say babies should be examined when their first teeth appear—usually at around six months.

Recently a study, led by Pedro Hallal of the Federal University, suggests that nearly a third of adults, 31%, are not getting enough exercise. That rates of exercise have declined is hardly a new discovery. Since the beginning of the industrial revolution, technology and economic growth have helped to create a world in which taking exercise is more and more an option rather than a necessity. But only recently have enough good data been collected from enough places to carry out the sort of analysis Dr Hallal and his colleagues have engaged in.
There are common themes in different places. Unsurprisingly, people in rich countries are less active than those in poor ones, and old people are less active than young ones. Less obviously, women tend to exercise less than men—34% are inactive, compared with 28% of men. But there are exceptions. The women of Croatia, Finland, Iraq and Luxembourg, for example, move more than their male countrymen.
Malta wins the race for most slothful country, with 72% of adults getting too little exercise, and Swaziland and Saudi Arabia are in close behind, with 69%. In Bangladesh, just 5% of adults fail to exercise enough. Surprisingly, six Americans in ten are active enough according to Dr Hallal’s study, compared with fewer than four in ten British.
These high rates of inactivity are worrying. Human beings seem to have evolved(進(jìn)化) to benefit from exercise while deliberately avoiding it whenever they can. In a state of nature it would be impossible to live a life that did not provide enough of it. But that is no longer the case. Actually lack of enough activity these days has nearly the same effect on life span(壽命) as smoking.
【小題1】We may learn from Paragraph 1 that_________.
A.the decline of exercise rates is newly discovered |
B.the study suggests 31% of female adults get too little exercise |
C.the good enough data has been collected from only one country |
D.the industrial revolution has changed the way people live to some degree |
A.have little time to exercise |
B.hate to get regular exercise |
C.take more exercise to lose weight |
D.exercise more than men in their country |
A.powerful | B.rich | C.lazy | D.unpopular |
A.Worldwide Lack of Enough Exercise |

Christian Eijkman, a Dutch doctor, left the Netherlands for the island of Java. Many people on the island had a disease called beri-beri. He was going there to try and find a cure.
At first, Eijkman thought some kind of germ (細(xì)菌) caused beri-beri. He raised some chickens. He didn’t eat them, but made experiments on them. The local people were quite surprised at that. One day he noticed that his chickens became sick when they were fed the food most Javanese ate — refined white rice (精煉米). When he fed them with unrefined rice, also known as brown rice, they recovered. Eijkman realized that he had made an important discovery — that some things in food could prevent disease. These things were named vitamins (維生素). The Javanese were not getting enough vitamins because they had actually removed the part that contains vitamins. Later, other diseases were also found to be caused by the lack of vitamins in a person’s food.
Today many people know the importance of vitamins and they make sure they have enough vitamins from the food they eat. If they don’t, they can also take vitamin pills.
【小題1】The underlined word “cure” in Paragraph 1 probably means ______.

A.spend his holiday |
B.find ways to grow better crops |
C.do some research about the island |
D.help the Javanese with their illness |
A.To eat them. |
B.To carry out his experiments. |
C.To give the Javanese a surprise. |
D.To make money by selling them. |
A.eat more rice | B.eat more meat | C.eat some chicken | D.eat vitamin pills |
A.beri-beri was caused by chickens |
B.the Javanese didn’t like vitamins |
C.Christian Eijkman’s experiment was successful |
D.the Javanese’s disease was caused by a kind of germ |

Nuclear power’s danger to health, safety, and even life itself can be summed up in one word: radiation.
Nuclear radiation has a certain mystery about it, partly because it cannot be detected by human senses. It can’t be seen or heard, or touched or tasted, even though it may be all around us. There are other things like that. For example, radio waves are all around us but we can’t detect them, sense them, without a radio receiver. Similarly, we can’t sense radioactivity without a radiation detector. But unlike common radio waves, nuclear radiation is not harmless to human beings and other living things.
At very high levels, radiation can kill an animal or human being immediately by killing masses of cells in vital organs. But even the lowest levels can do serious damage. There is no levels of radiation that is completely safe. If the radiation does not hit anything important, the damage may not be serious. This is the case when only a few cells are hit, and if they are killed immediately. Your body will replace the dead cells with healthy ones. But if the few cells are only damaged, and if they reproduce themselves, you may be in trouble. They can grow into cancer. Sometimes this does not show up for many years.
This is another reason for some of the mystery about nuclear radiation. Serious damage can be done without the victim being aware at the time that damage has occurred. A person can be irradiated(輻射)and feel fine, then die for cancer five, ten, or twenty years later as a result. Or a child can be born weak as a result of radiation absorbed by its grandparents.
Radiation can hurt us. We must know the truth.
【小題1】Which of the following statements is true?
A.Nuclear radiation is just like common radio waves. |
B.Nuclear radiation can cause cancer to human beings. |
C.Nuclear radiation can be detected by human senses. |
D.Nuclear radiation can be safe to human beings if its level is low. |
A.By damaging its heart. | B.By killing a few cells. |
C.By hitting any place in its body. | D.By killing many cells in important organs. |
A.die of cancer after many years | B.die immediately |
C.have a child who may be born weak | D.a(chǎn)ll of the above |

Women who own cats are more likely to have mental health problems and kill themselves because they can be infected by a common parasite that can be caught from cat litter, a study has found.
Researchers found women infected with the Toxoplasma gondii (T. gondii) parasite(剛地弓形蟲), which is spread through contact with cat waste or eating undercooked meat or unwashed vegetables, are at increased risk of attempting suicide.
The study involved more than 45,000 women in Denmark. About a third of the world’s population is infected with the parasite, which hides in cells in the brain and muscles, often without producing symptoms.
The infection, which is called toxoplasmosis(弓形蟲病), has been linked to mental illness, such as schizophrenia(精神分裂癥), and changes in behavior.
The study’s senior author Doctor Teodor Postolache, an associate professor of psychiatry(精神病學(xué)) at the University of Maryland School of Medicine in the United States, said, “We can’t say with certainty that T. gondii caused the women to try to kill themselves, but we did find a predictive association between the infection and suicide attempts later in life that deserves additional studies.”
Doctor Albert Reece, vice president of medical affairs at the University of Maryland, said, “T. gondii infection is a major public health problem around the world, and many people don’t realize they’re infected.
“Dr Postolache is a leading expert on suicide neuroimmunology(神經(jīng)免疫學(xué)). Suicide is a critically important mental health issue. About one million people commit suicide and another 10 million attempt suicide worldwide each year. We hope that this type of research will one day help us find ways to save many lives that now end too early in suicide.”
Dr. Postolache’s research team at the University of Maryland was the first to report a connection between T. gondii and suicidal behavior in 2009. He is cooperating with researchers in Denmark, Germany and Sweden to confirm and investigate the way leading to this association.
The T. gondii parasite thrives in the intestines of cats, and it is spread through their waste. All warm-blooded animals can become infected through contact with it. Humans can become infected by changing their infected cats’ litter boxes, eating unwashed vegetables, drinking water from a polluted source, or by eating undercooked or raw meat.
Not washing kitchen knives after preparing raw meat before handling another food item also can lead to infection. Pregnant women can pass the parasite directly to their unborn babies and are advised not to change cat litter boxes to avoid possible infection.
Babies don’t produce antibodies to T. gondii for three months after they are born, so the antibodies present in their blood represented infection in the mothers. The scientists studied Danish health patients to determine if any of these women later attempted suicide, including cases of violent suicide attempts which may have involved guns, sharp instruments and jumping from high places.
The study found that women infected with T. gondii were one and a half times more likely to attempt suicide compared to those who were not infected, and the risk seemed to rise with increasing levels of the T. gondii antibodies.
Dr Postolache noted limitations to the study, such as the inability to determine the cause of the suicidal behavior.
The findings were published online in the Archives of General Psychiatry.

C.O.P.D(慢性障礙性肺病) blocks air flow through the lungs. It makes breathing difficult. The leading cause of C.O.P.D. is cigarette smoking. Experts at the National Institutes of Health in the United States say there is no cure to the damage to the lungs.
Dawn Demeo is an assistant professor at Harvard Medical School in Boston, Massachusetts. She said, “By 2020, C.O.P.D. may be the third leading cause of death across the world.”
C.O.P.D. is a new name for emphysema(肺氣腫) and chronic bronchitis(慢性支氣管炎). These are the two most common forms of the disease. Many people with C.O.P.D. have both of them. And Doctor Demeo says more women than men now die from the disease.
She is the lead author of a study by a team from Harvard’s Brigham and Women’s Hospital and the University of Bergen in Norway. The new study adds to findings that women may be more at risk than men from the damaging effects of smoking.
The team examined results from a Norwegian study of 954 people with C.O.P.D. Inga-Cecilie Soerheim co-wrote the team’s findings. Doctor Soerheim says they show that women suffered the same level of C.O.P.D.as men. But the female smokers were younger and had smoked a lot less.
The team also looked at two groups among the people in the study. These were people under the age of 60 and those who had smoked for less than 20 years. In both cases, women had more serious C.O.P.D. and a greater loss of lung function (功能)than men.

ASK any group of teenagers in the UK what they most like to eat, and foods like pizzas, curries, pasta, burgers and chips are bound to get a mention – and many young people would probably also list hanging out at the local fast-food restaurant as one of their favorite pastimes.
But what teenagers like to eat is not necessarily what they should be eating. According to the National Diet and Nutrition Survey, far too many young people in the UK between the ages of four and 18 consume too much fat, sugar and salt in their diet and take in too many calories. Meanwhile their intake of starchy carbohydrates (淀粉類碳水化合物), fibre, iron, vitamins and calcium is too low.
For a growing body, eating foods containing plenty of calcium, such as milk, yoghurt and cheese, is particularly important as calcium is essential for the development of healthy, strong bones. Similarly, foods that are rich in iron are good for young, rapidly developing bodies, so red meat, bread, green vegetables, dried fruit and fortified (強(qiáng)化的) breakfast cereals (谷類食物) are also recommended.
It is during our teenage years that lifestyle habits can become entrenched (根深蒂固的), so it is important that young people are educated about what foods are good for them. In 2005, in an attempt to change eating habits and open teenagers’ minds to new flavors and new tastes, celebrity chef Jamie Oliver launched a ‘Feed Me Better’ campaign. As part of a television series, ‘Jamie’s School Dinners’, he worked with teachers and cooks in a number of schools across the UK to provide more healthy, nutritious school meal options. Although the campaign was rather resisted at the beginning, it was generally regarded as a huge success and helped to influence governmental policy on nutritional standards for school meals.
No one expects to end the teenage love affair with fast and junk food but, hopefully, if projects like ‘Feed Me Better’ and the Government's own ‘Change4Life’ campaign continue to give out the right messages, more young people will understand the importance of balancing occasional treats with healthier food options.
【小題1】What can we conclude from the first two paragraphs?
A.British teenagers eat too much junk food. |
B.British teenagers need to take in more calcium. |
C.What British teenagers like to eat is probably what their bodies need |
D.British teenagers should reduce their intake of starchy carbohydrates. |
A.to improve their brainpower |
B.to build healthy strong bodies |
C.to provide energy for their body |
D.to help change their eating habits |
A.show off his excellent cooking skills |
B.teach students how to cook nutritious meals |
C.make the public keep an eye on school food |
D.improve the children’s diet at school |
A.Teenagers should never eat any junk food at all. |
B.It’s easy for children to give up unhealthy eating. |
C.It’s okay for a healthy eater to have a little junk food. |
D.Once developed, our eating habit will never change. |

“In only six days I lost seven pounds of weight.”
“Two full inches in the first three days!”
These are the kinds of statements used in magazine, newspaper, radio and television ads, promising new shapes and new looks to those who buy the medicine or the device. The promoters of products say they can shape the legs, slim the face, smooth wrinkles,or in some other way to add to beauty or desirability.
Often such products are nothing more than moneymaking things for their promoters. The results they produce are questionable, and some are dangerous to health.
To understand how these products can be legally promoted to the public,it is necessary to understand something of the laws covering their regulation. If the product is a drug,F(xiàn)DA(Food and Drug Administration)can require proof under the Food,Drug, and Cosmetic Act that is safe and effective before it is put on the market. But if the product is a device,F(xiàn)DA has no authority to require the proof of safety or effectiveness. If a product already on the market is a danger to health,F(xiàn)DA can request the producer or distributor to remove it from the market voluntarily,or it can take legal action, including seizure (查封) of the product.
One notable case a few years ago involved an electrical device called the Relaxacisor, which had been sold for reducing the waistline. The Relaxacisor produced electrical shocks to the body through contact pads. FDA took legal action against the distributor to stop the sale of the device on the grounds that it was dangerous to health and life.
Obviously, most of the devices on the market have never been the subject of court proceedings (法律訴訟),and new devices appear continually. Before buying,it is up to the consumer to judge the safety or effectiveness of such items.
【小題1】It can be inferred that the ads mentioned in the text are________.
A.objective | B.costly | C.unreliable | D.illegal |
A.if it is a drug |
B.if it is a device |
C.if its consumers make complaints |
D.if its distributors challenge FDA's authority |
A.a(chǎn) product which was designed to produce electricity |
